With Spring finally starting to bloom, it could only been one thing. Easter is around the corner! For me, my favorite thing about this Spring holiday is enjoying a nice Easter Brunch with my family. And what better way to enjoy brunch than having a refreshing Mimosa in your hand? Now, that’s the life!
Whether you are going to be surrounded by all of your favorite people, or dreading the political talk from your Uncle Joe, you’ll want a drink in your hand. A Mimosa is the perfect drink for Easter Brunch, or any brunch for that matter. You can thank the OJ for that.

1/2 c. pineapple wedges, divided
1/4 c. pineapple juice orange sanding sugar
1 c. orange juice
1 c. pineapple juice bottle champagne (or prosecco)
1/2 c. sliced strawberries
1. Run a pineapple wedge around the rim of each glass. Pour sanding sugar into a shallow bowl, then dip top of each glass in sanding sugar.
2. Fill each glass about a quarter full with orange juice, then add pineapple juice until juice comes up about halfway. Top each glass with champagne.
3. Garnish glasses with strawberries and pineapples. Feel free to get creative with the toppings, it’s totally customizable!
