Cauliflower is a superfood often overshadowed by its green cousin, broccoli. However, it deserves a regular rotation in your diet as it contains an impressive array of vitamins, minerals, antioxidants, and other nutrients.

Adding to cauliflower’s appeal is its extreme versatility. You can eat it raw, add it to salads, or use it in your cooking. Cauliflower can even be seasoned and mashed for a healthier version of mashed potatoes. Just don’t tell the kids, or the husband.

Gluten Free Cauliflower Breakfast

Ingredients

1 Red Onion
1 head Broccoli
1 head Cauliflower
2 Eggs
Scallions
Shredded Cheese
GF Garlic Powder
GF Bread Crumbs
Cayenne
Chili Powder
Crushed Red Pepper
Olive Oil
Butter

How To

1. Chop onion and add to pan with olive oil over medium high heat. Slice and break apart the broccoli and cauliflower into bite sized pieces. Add to pan with water, a pinch of salt and butter. Bring to a boil. 

2. Caramelize the onions, being careful not to burn. Add salt, pepper and garlic powder to your liking. Once caramelized, set aside. Meanwhile, continue mixing the cauliflower and broccoli to soften.

3. Turn on broiler at 500 degrees. Drain broccoli and cauliflower and transfer to an oven safe pan or dish. Add cayenne, garlic powder, chili powder and crushed red pepper to your liking, Finish with olive oil and add to oven. Broil for about 2 minutes, or until a little browned. Sprinkle with bread crumbs and transfer to serving dish with onions and rest in oven. 

4. Cook the eggs sunnyside up on medium heat. Sprinkled with cayenne and chili powder. Top with shredded cheese and cover with lid. Turn off heat to continue to cook. Slide eggs on top of vegetables and serve.
